Ingredients
For the Mojitos
¾cupfreshly squeezed lime juice(juice from approximately 6 large limes)
½cupfresh mint leaves
¾cupsimple syrup(store-bought or make your own, see Notes)
1cupwhite rum(see Notes)
crushed ice(as desired)
club soda(or ginger ale, or sparkling water; see Notes)

Instructions
Add ¾ cup freshly squeezed lime juice and ½ cup fresh mint leaves to pitcher. Gently muddle mint leaves to release natural oils and flavors. Be careful not to over-muddle.
Add ¾ cup simple syrup and 1 cup white rum to pitcher. Stir well, making sure to incorporate muddled leaves and oils from bottom of pitcher.
Add crushed ice as desired, filling pitcher until approximately ⅓ or ½ full. Note: amount of ice added can change overall strength of mojitos and total number of mojitos made.
Fill remainder of pitcher with club soda, then gently stir mixture to incorporate ingredients completely. Note: amount of club soda needed will depend on preferences, size of pitcher, and amount of ice used. Amount of club soda added can change overall strength of mojitos and total number of mojitos made.
Taste mojito mixture and adjust, adding more lime juice, simple syrup, rum, and/or club soda as desired. Stir well after each addition. When satisfied with flavor and strength of mixture, pour mojito mixture into serving glasses. Garnish with lime wedges and 1 to 2 whole mint leaves per glass if desired, and serve chilled.
Recipe Notes
Club Soda: The amount of club soda (or alternative) you use will change the number of mojitos this recipe makes, the strength of the mojitos, and the nutrition information shown.
Simple Syrup Alternatives: Make your own (see below) or stir ½ ounce honey into ½ ounce hot water, whisking until very smooth.
Ice: To keep the mojitos from being watered down as the ice melts, freeze lime wedges and use those in the pitcher instead of ice. You can also make ice cubes using fresh lime juice or club soda instead of water.
Make it Lower Carb/Lower Sugar: Make your own simple syrup out of a powdered erythritol or allulose.
Make it a Mocktail: Replace the rum with additional club soda.
Make Your Own Simple Syrup
Put equal parts sugar (or powdered erythritol, or allulose) and water into heatproof glass container.
Microwave on high just until mixture barely starts to boil, usually around 1 minute or so. It’s fine if it boils for a few moments.
Remove from microwave and stir to dissolve sugar.
Let syrup cool before adding to other ingredients.
