Creamy Avocado Dressing

This avocado dressing is deliciously creamy, easy to make, and healthy! With yogurt, olive oil, a bit of cilantro or other herbs, a little garlic, and a squeeze of lime, this salad dressing is super versatile, perfect to have in the fridge at all times for an instant salad upgrade!

Equipment

  • Food processor or standard blender

Ingredients

  • 1 avocado (halved, peeled, pit removed)
  • ¼ cup plain yogurt (see Notes)
  • ¼ cup olive oil (or other neutral oil)
  • ¼ cup water (plus more if needed)
  • ¼ cup cilantro leaves (or basil or parsley leaves)
  • squeeze of lime (if using cilantro, ½-1 teaspoon vinegar if using other herbs)
  • 1-2 cloves garlic (minced)
  • ½ teaspoon salt
  • pepper (to taste)

Instructions

  • Add all ingredients to food processor or blender.

  • Process until smooth. For thinner consistency, add more water in 1 teaspoon increments, processing after each addition. Serve immediately or transfer to airtight container and refrigerate until chilled.
